Strawberry Avocado Salad with Honey Lime Mint Dressing

Do you love strawberries like me? I love eating fresh strawberries, especially when they are in season! This salad features two of my favorite foods – avocados and strawberries. Brightened with the zesty taste of lime and sweet with honey this salad is sure to be a hit at your table.

Strawberries are packed with antioxidants, fiber, Vitamin C, and folate, offering benefits like improved heart health (lowering blood pressure/cholesterol), better blood sugar control, immune support, and potential protection against some cancers and age-related brain decline, all while being low in calories and sugar. Their anthocyanins (which give the red color) fight inflammation and cell damage, making them a great addition to a healthy diet.

The other ingredient I would love to highlight is the mint. It makes the dressing even more flavorful and you’ll need just a teaspoon for flavor – because mint is strong! Mint is very helpful with digestion, nausea, and headaches. Even if you are not eating mint but just smelling it, you can reap some of the benefits to help your head and energy level.

The herb is a naturally soothing substance, so it can alleviate the inflammation and temperature rise that is often associated with headaches and migraines. Mint is a natural stimulant and can help with depression and low energy levels.

Strawberry Avocado Salad with Honey Lime Vinaigrette


1 Bag Baby Spinach

3 Cups Sliced Hulled 
Strawberries

2 Large Haas Avocados
Peeled, Pitted and Chopped

¼ Rice Vinegar

¼ Cup Lime Juice

2 TB Honey

2 Tsp Dijon Mustard

1 Tsp Chopped Mint

1/3 Cup Extra Virgin Olive Oil

Sea Salt and Freshly Cracked Black Pepper

2 TB Toasted Sesame Seeds


Wash and dry the spinach well. Place in the bottom of a salad bowl and top with the strawberries and avocado. In a food processor blend together the vinegar, lime juice, honey, mustard, mint and olive oil. Season to taste with salt and pepper. Drizzle over the salad and top with sesame seeds. The easiest way to toast sesame seeds is in a dry sauté pan over medium high heat. Stir often and don’t leave the pan alone – sesame seeds go from raw to burned in just seconds!
